white and red wine reduction

White Wine Reduction
makes approximately 1.5L

1000g water
1000g white wine vinegar
1000g white wine [not Sauvignon Blanc]
250g p/w onion, chopped
10 whole white peppercorns
3 bay leaves
2 sprigs of Thyme
½ bunch Taragon
parsley stalks

Put everything into a saucepan, place on very high heat and reduce rapidly until half remains. Strain and refrigerate use as require – keeps indefinitely.
