…..akka Blue Lagoon to us!!!

The following recipe comes from Four Pillars Gin’s Sam NG,
ambassador & Bar Tender at large…thanks Sam!

makes one (makes 6 in brackets)..really Sam!

20ml (120ml)Four Pillars Gin…from the freezer
20ml (120ml) Lillet Blanc
20ml (120ml) lemon juice
20ml (120ml) Blue Curacao…from the freezer
3ml (18ml) absinthe

Shake and strain into a coupette. Garnish with a lemon twist.

Publisher’s note…We didn’t strain, straight onto shaved filtered water ice and drank them REAL FAST!!

Isomalt garnish

Makes 6
120g isomalt
4 drops of blue food colouring…the cheap kind from supermarkets
edible flowers

silica gel sachets and an airtight container if you want to keep them

Lay a couple of sheets of baking paper on your work bench. Weigh the isomalt into a small heavy based saucepan and place it on medium heat. Shake the saucepan until it is about half melted. Add the food colouring and shake it in and keep shaking until the isomalt is completely melted.

It can take a bit of practice but pour the isomalt in a decoration that will cover your glass and push a flower into it. Allow them to cool completely and then store in an airtight container with the silica gel.
