1kg raw sesame seeds
Pre heat oven to 160°C
Put the sesame seeds into a large very clean deep-sided roasting pan and tossing them over constantly cook until they are evenly golden. Depending on how cold the seeds are this can take anything from 30 – 60 minutes.
Stand the tray on a rack and allow to cool for 15 minutes. Put the seeds into a Thermomix add the salt and process the seeds until it starts to get oily and the seeds are crushed. Scrape down the sides, and with the motor running at EVO until you have a nice thick smooth paste.
I like to leave it quite thick and adjust the thickness depending on what I am using it for.
Scrape into a container, contact cover with Freezer-go-Between or extra virgin olive oil and refrigerate. Keeps well, but always make sure you scrape it down and cover again and as you use it transfer to smaller containers..
