do not make this in a Thermomix…it crushes the seeds too finely and makes it impossible to sieve without seeds.


500g fresh or frozen raspberries
100g caster sugar
50g Framboise liqueur

Weigh everything into a canister and using a stick mixer puree. Strain through a fine sieve and refrigerate until ready to sieve.

note…we save and freeze the seeds until we have 500g then boil them up with 500g sugar, 400g water and 100g white wine vinegar…simmer very slowly for 10 minutes, allow to sit for an hour, then strain off without pressing against the seeds. Makes a great summer spritzer.
