Pork and Baby King Mushroom Soup
serves 6 with dumplings – 4 as an entrée
300g baby king mushrooms – the mushrooms about 12mm left whole the rest roughly chopped to about 8-12mm
50g peanut oil
15g ginger:garlic
750g jellied Asian pork stock
750g filtered water
30g Mega Chef soy sauce
white pepper, freshly ground
2 spring onions – cleaned and finely sliced

Sauté the mushrooms in the peanut oil on high heat to colour them lightly. Add the ginger:garlic nd cook, stirring, just long enough that it is cooked out. Add the stock, water, soy and pepper and bring to a very gentle simmer. Cook on very low heat for about 20 minutes.
Taste and adjust if required using more soy rather than salt.
