CHERRIES AND STRAWBERRIES WITH BLACK PEPPER

Number of serves depends on the size…large portion 6, smaller served in beautiful glasses 8-10. We prefer the smaller portions; the flavours are very intense.

500g black cherries, pitted
2 punnets of strawberries hulled and halved
5g juniper berries, crushed
5g black pepper, crushed
150g caster sugar
50g Leonardi Dolce Vita balsamic vinegar
6 basil leaves, finely shredded
6 mint leaves, finely shredded

Gently mix everything together and allow to stand at room temperature, turning over from time to time for at least three hours before serving. Do not refrigerate.

Delicious with basil and mint sorbet and a perfect match for very chilled sparkling burgundy.
