Yes, you need a few pantry items but nothing most of you won’t already have. If you don’t have all of the ingreidents, don’t stress use your imagination. Add to that nothing in these recipes that you can’t buy at a decent supermarket.

Most recipes are for ten, as we figure you’re smart enough to work out the ratios. As most of you will know I am not a fan of cups and spoons but since these really aren’t recipes, there will be splashes and spooons and the very odd cup here and there.

So here goes!

rare beef salad

10 minute wonder…doesn’t include the shopping time

for the INGREDIENTS

for the dressing
2 dessert spoons of Lao gan ma, with peanuts if you like
200g EVO
100g white balsamic vinegar

1000g finely sliced rare beef, roughly chopped a supermarket item
2 medium red onions, finely sliced
4-5 Lebanese cucumbers, cut into smallish chunks
3 perfect avocadoes, cubed
Thai basil, or Italian
mint leaves if you must
chopped roasted peanuts….good but not essential

salt and pepper are not required

cheats hummus

dFor almost half a century I have been able to boast that the only canned ingredient that came into either my commercial or domestic kitchen was coconut milk. Canned tomatoes were an anathema to me, but this year, having not made quite enough of my own sauce I started using Mutti and have to admit they are brilliant. None of the nasty tin taste of the cheap imported tomatoes and an enviable consistency that is hard to achieve with my own sauce.

I have always used Ord River chick peas for preference, but recently, unable to find them I tried two other brands with disastrous results. The only chick peas that at the moment seem to be consistent are the Kabul chick peas available from most speciality grain shops. In desperation I purchased a can of organic chick peas, [pictured left] and available, apparently at most supermarkets, and have made a decent hummus in a matter of minutes. True I have the toum scroll down a recipe from Gerard’s [Brisbane] in the freezer. It’s very easy to cut off a piece as because of the amount of oil it never freezes hard. Handy but I’ve offered a work around in the recipe below.

you need

400g can of Biofood organic Chick Peas, very well drained
30g toum scroll down
30g tahina [we make our own]
10g finely chopped garlic
30g EVO
30g fresh strained lemon juice
2g maldon sea salt
1g freshly milled white pepper
2 ice cubes

Put everything in a food processor and process until smooth. You may like to make it a little thinner by add a small splash of EVO. No toum, add 5g garlic, 25g EVO and 10g lemon juice.
