A work in progress.

After several failed attempts using high heat on long-life supermarket almond milk, I noticed in the Bottega 1995 catalogue Mandolé Orchard Almond Milk ‘BARISTA’ and it occurred to me this might be the answer to gluten-free, dairy-free and vegan dishes that I had in mind.

The two long-life brands, apart from being tasteless, both split at boiling point. Still a work in progress, with the Mandolé Orchard Barista Almond Milk, I have managed to make green almond ice cream [not vegan], an excellent recipe replacement for my Roasted Red Capsicum Bavarian. The Bavarian is gluten-free, dairy-free and egg free and could be made vegan if I took the time and trouble to play around using agar agar instead of gelatine.

My next will be to try and make a crème caramel and a simple little almond milk jelly with an almond milk sorbet. A work in progress, but I’m hoping worth the effort to give some excellent alternatives for those unfortunate people with serious dietary issues. I’m also sure I could make a pretty good coffee sorbet using the milk.

Recipes will be written up in the coming months, but in the meantime, we have a list of South Australian stockists.

The Mandolé Orchard Almond Milk is a refrigerated product, however, it has a lengthy shelf life and remained in perfect condition during that time.
