They found dukkah in the tombs of Eygpt. For some reason it seems to have gone out of fashion but I love it and keep it in my freezer.

It can be hauled out, warmed in the oven, and served as simply as freshly baked bread with EVO. Equally a silly old pork chop rolled through ABC Ketyap Manis and then dukkah ad cooked in the air fryer is absolutely delicious.

make sure yourbuy quality local almonds

makes about 250g

40g coriander seed
5g whole white pepper
20g whole cumin
100g sesame seeds, dry roasted in a 160°C oven until golden pan until golden
100g small local almonds, oven roasted at 160°C until lightly coloured, cooled and crushed
5g Maldon sea salt
5g Sumac

easy and delicious

Put the coriander seed, pepper and cumin into a small pan and roast tossing them over all the time until they are aromatic and then tip them into a blender. Add half of the sesame seeds and crush. Tip into a bowl, add all of the remaining ingredients and mix together.

Store in the fridge in an airtight container or vacced in the freezer. Before serving warm quickly in a pan, or oven, or give it 30 seconds on medium in a microwave.

tip — we do a lot of things with Dukka and have made a list of great dishes below, so we make this in bulk, vac it and then we have it for emergencies of any kind.

recipe ideas

• We often start a meal with freshly baked bread, great EV olive oil and dukka and perhaps one other dip or some ripe tomatoes. Everyone seems to love this starter so much, one really doesn’t need as much as usual of everything else, a fact attested to with our recent luncheon where we had so much food left over, we’ve been making parcels for friends all day. Don’t forget to run your wood oven bread under the cold water and put it into the oven again to restore it to that just baked standard.

• For a delicious flavour difference, try rolling fish fillets through olive oil and a little dukkah, baking them for minutes in a pre heated 200˚C oven and serving them with nothing more than wedges of green lemons and small potatoes that have been steamed in their jackets.

• Add little dukkah to steamed new potatoes that have been rolled through olive oil, salt and pepper.

• Equally as good, hard boiled eggs, peeled rolled through your favourite olive oil and rolled through the dukkah. Quails eggs may be a good and slightly less filling option than chicken eggs.

• Simple egg, olive and red onion salad, dressed with extra virgin olive oil, lemon juice, lots of flat leaf parsley and a sprinkle of dukkah.

• Even the breakfast omelette takes a new dimension when a little dukkah, fresh coriander and dill and finely chopped
