When a friend heading for summer in Europe dumped kilos of green cheer tomatoes I was less than enthusiastic. However, not liking too waste anything I was looking for quick and easy.
You may not want to mkae Cajun martinis, but these are a rather handy addition to a salad before summer tomatoes kicks back in. They are even quite good as a canapé but I get most of the vinegar off and give them a little splash of EVO or a dab of mayonnaise.
you will need
sterilised jars and lids
a sterilised needle
food service gloves
3kg very green cherry tomatoes washed and drained in a colander
500g white wine vinegar
250g sugar
1-3 chillies, finely sliced
1 bay leaf
5g whole white pepper
30g yellow mustard seeds
30g Maldon sea salt
1/2 bunch dill, stalked and chopped
Prick the clean tomatoes three times and fill the jars.
Weigh everything for the pickling liquid, except the dill into a saucepan and place it on high heat. Stirring constsntly bring to the boil and simmer until the sugar is dissolved.
Add the dill, andusing a sterilised ladle fill the jars and seal.
I like to keep my preserves in sight for a couple of weeks just to mkae sure the sterilised process has been perfect and that you don’t need to do a save.
Store in a cool dark place.
I detest waste and nothing makes me angrier than seeing fruit dropping to the ground to rot. Oz Harvest has connections with local charities who will come and pick and take it to a distribution point.
